Drawing inspiration from watching his father cook fresh pasta and gelato as a young boy in Milan, Italy, Head Chef Christian Colognesi believes that simplicity and passion are the most important ingredients for a truly great dining experience. 

And if you’re needing inspiration, look no further than Chef’s own favourites – the banana hotcakes for breakfast; a beef budger at the bar; or his mouth watering slow cooked pistachio lamb rump for dinner.

Christian colognesi       

HEAD CHEF

Hailing from Milan, Italy, head chef Christian began his career working in distinguished restaurants around Europe before moving to Sydney, Australia. Since moving here, his traditional Italian cuisine has truly made its mark during his time as head chef at the Martini Restaurant and Bar, Apertivo and, most recently, Bambini Trust. Influenced by his father’s cooking and inspired by a passion for all things food and wine, Christian’s creations are trademarked by a beautiful simplicity and balanced flavours.

RESTAURANT MANAGER

The connection with restaurants and cafes  starts at a very young age for Konstantinos. Working close to his father at his family operated small cafe located in the gulf of Pagasitikos in Greece, he learnt many things which sparked his passion and gave him the experience to successfully run and direct his own cafe at the age of 17. In 2007 he moved to Australia were he expanded his career in hospitality. Konstantinos has extensive experience in many fields of the hospitality world from tea rooms to fine dining and functions to Hilton Hotel management. The Hyde is the next exciting step in his long path.
